New England has such crazy weather patterns! It was 50 degrees yesterday and this morning 28! Brrr ❄️ I made this grain-free, sugar-free Carob-zucchini bread. High in protein….moist and delicious! Especially when paired with 🍌, @once_again_nut_butter sunflower butter and @kitehillfoods almond milk yogurt mixed with @sportsresearch collagen peptides. Then sprinkled with Carob powder 👌 so good!
Preheat oven to 350 degrees. Mix all ingredients except zucchini well with a whisk, then stir in zucchini. Pour batter into a small loaf pan sprayed with @chosenfoods avocado oil.
Bake for about 35 mins.
