Taco Tuesday Time! Chipotle Shrimp, Mango Salsa and Red Cabbage Slaw!

Wondering what to make for dinner?? Well it is Taco 🌮 Tuesday of course!! Rather than over indulging in some loaded unhealthy choices, try these healthy and delicious chipotle shrimp tacos with mango-avocado salsa and lime-cilantro red cabbage slaw! They are sooooo delicious!!!

Red Cabbage Lime-Cilantro Slaw:

  • Half of red cabbage shredded
  • 1/2 cup chopped cilantro
  • 1/2 cup finely chopped green onion
  • Juice of 2 limes
  • 1/2 tsp grated ginger
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1 tsp diced jalapeño
  • 1 tsp coconut aminos

Mix all ingredients in a bowl and let marinate for a couple hours.

Mango-Avocado Salsa:

  • 1 ripe mango, diced
  • 1 cucumber peeled and diced
  • 1 package of cherry tomatoes 🍅 halved
  • 1/2 red onion minced
  • 1 ripe avocado diced
  • 1/2 cup chopped cilantro
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/2 tsp red pepper flakes (if you like spice)
  • Juice of two limes

Mix all ingredients well in a bowl and let marinate for a couple hours

Chipotle Shrimp 🍤:

  • 1 pound of wild shrimp, peeled
  • Juice of one lime
  • 2 cloves garlic minced
  • 1 tbls olive oil
  • 1 tsp ground chipotle pepper
  • 1 tsp ground cumin1
  • 1 tsp coconut aminos

Preheat oven to 350. Mix together the marinade ingredients and marinate the shrimp in the mixture for about 20 minutes. Pour the shrimp onto tinfoil and bake on a baking sheet for about 10 minutes until shrimp are opaque and cooked through.

Optional toppings:

  • Fresh cilantro
  • Mix some yogurt or sour cream with some chipotle powder, lime, salt, and pepper for a creamy dressing topping.
  • More avocado

Lastly, assemble the tacos! Warm some tortillas of your choice, layer on the shrimp, slaw and salsa and enjoy!
