Going dairy-free is pretty easy for me, but it is hard to find delicious cheese alternatives. Am I right? I mean, there are plenty of delicious milk alternatives, ice cream alternatives, etc. But, cheese can be difficult. I am a fan of many of the cashew based cheeses, but I try to limit excessive amounts of nuts. I tend to choose sunflower seeds and pumpkin seeds, as they are a bit more healthful and digestible in my eyes. Plus, I just love the flavor sunflower seeds have! So, I decided to take a whack at a new cheese spread that is sunflower seed based! It came out delicious and the texture is completely on point! Spread it on some toast with tomatoes and sunflower sprouts today (keeping up with the sunflower theme!) This could be used on pizza, bread, as a dip for vegetables…options are endless!
Sunflower Cheese Spread:
1 cup @terrasoul sunflower seeds, soaked overnight then drained
1/4 cup @bobsredmill nutritional yeast
1 tbls grass fed beef gelatin
1/2 tsp turmeric
1/2 tsp Himalayan salt
Red pepper flakes
2 cloves garlic
2 slices onion
1 tbls lemon juice
Place all ingredients except gelatin in food processor, blend until smooth. Scrape sides as necessary. Mix gelatin with about 1/3 cup warm water until dissolved and add to food processor. Process for a couple minutes, taste and add more spices if you wish. Once smooth, place in container and refrigerate for at least an hour! Then, enjoy!! With crackers, toast, pizza etc!
