Toast Tuesday! AKA the best day… plus homemade 2-ingredient blueberry jam!

Happy TOAST Tuesday loves! I could eat toast everyday, but it just has a special meaning on Tuesdays… 🤷‍♀️ I went for an awesome bike ride to Marina Bay this morning and it was beautiful out! Something about just me and my bike that starts my day off right ❤️ fresh air, ocean breeze 🌊 ahhhhh. When I got back I made this delicious plate of goodness. 2 slices of @julianbakery honey paleo bread toasted, one topped with strawberries 🍓 and avocado 🥑 and the other topped with blueberry jam made with warm blueberries and @sportsresearch beef gelatin and banana and @georgiagrinderscashew butter. Plus, a side of wild smoked salmon from @traderjoes and a fried @egglandsbest egg over @organicgirl arugula. Happy Tuesday! Enjoy the day and I hope you smile! Love and light xoxo

Blueberry jam

  • 1 cup of fresh blueberries
  • 1 scoop of beef gelatin (I use Sports Research)

Heat blueberries over medium high until the berries are broken down and soupy. Remove from heat and quickly stir in the beef gelatin with fork making sure to not let it clump. Refrigerate for about an hour, or if you want to use it right away you can put in freezer and take out and stir about every 5-10 minutes until creates a jelly consistency.
