KABOCHA SQUASH PANCAKES…and a side of eggs…

Saturday morning spread 😋Happy weekend lovelies! How is everyone this morning?? I’ve had a killer Saturday so far…went for a ride at @flywheelsports and KILLED it! I had a personal PR and I placed 1st in the class! That’s a first for me! Not one to gloat but I felt pretty good afterwards…it means I’ve gained strength ❤️ I came home to celebrate with this pancake and egg combo…some kabocha squash pancakes 🥞 topped with @georgiagrinders pecan butter, @foragerproject cashew milk yogurt and @nunaturals chocolate syrup. Plus alllll the fresh berries (I’m going to be so sad when the berry season ends…) and two scrambled @vitalfarms eggs. Killer workout, killer breakfast…Saturday I GOT you 😉 I have to get ready for a wedding this afternoon. Treated myself to a pedi and lobsters last night! This weekend ROCKS! I hope yours rocks too!

Pancakes:

  • 1 cup steamed kabocha
  • 2 tbls @nutiva coconut flour
  • 4 egg whites (or one egg and two whites)
  • 1 tbls @bobsredmill ground flax
  • 1/2 tsp cream of tarter
  • 1/2 tsp vanilla
  • Cinnamon

Blend ingredients and spray skillet (I used my @lodgecastiron skillet) or griddle with @chosenfoods avocado oil. Pour about 1/3 cup of batter onto skillet. Cook batter 2-3 minutes in each side, flip when bubbly on first side. Top off and enjoy.
