GRAIN-FREE CREPES!! OMG these were soooooo flipping delicious. I never thought I could make a gluten-free crepe that tasted like the real thing, never mind GRAIN FREE too! Collagen-cassava crepes on this Labor Day morning! I got up and went to a spin class at @turnstyleboston and had an awesome ride! Then came home to make these! I topped them with @georgiagrinders cashew butter, @nunaturals chocolate syrup, @foragerproject cashew milk yogurt and strawberries…plus some banana and cacao nibs on the side. I highly recommend you DO THIS! Happy Labor Day loves!
RECIPE: (makes about 6 8-inch crepes)
- 1/2 cup @ottos_cassava_flour
- 1 @peteandgerrys egg
- 1/2 cup water
- 1/4 cup cashew milk
- 1/2 tsp Himalayan salt
- 1/2 tsp vanilla
- 1 tablespoon melted @nutiva coconut oil
1 scoop @furtherfood collagen
Whisk together all ingredients (I mixed the dry ingredients well first then added wet). Should be a thin pancake consistency. Heat 8 inch skillet (I used my @lodgecastiron skilled) on medium heat. Spray with @chosenfoods avocado oil, and when it’s hot, pour about 1/3 cup of batter (be sure to swirl pan side to side to make sure the whole pan is covered. Cook until just about dry (about 2 minutes), then flip for another minute. Repeat! Make sure the pan is greased enough. Top with toppings and enjoy!
