Paleo Plantain Flatbread!

FOUR INGREDIENT PLANTAIN FLATBREAD AND SPINACH & BROCCOLI AVOCADO PESTO! Ladies and gents…I make a lot of paleo crusts, and I think we have a winner! This flatbread is no joke!! A little bit chewy with a crisp outer edge, and it only takes FOUR ingredients! Topped it off with this delicious pesto (also just a few simple ingredients!) plus some watermelon radish, zucchini, more avocado and pumpkin seeds!!! Holy hell, my taste buds are so happy right now! 🙃 I hope you’re all having a wonderful Thursday!

  • 3/4 yellow plantain
  • 2 tablespoons @nutiva coconut flour
  • 1 tablespoon psyllium husk
  • 4 egg whites
  • Pinch of baking soda
  • Squeeze of lemon
  • Spice (I used @paleopowder italian blend)

Preheat oven to 450. Spray a piece of parchment paper with @chosenfoods avocado oil. Blend all ingredients for the crust…will be thick and a bit sticky. Spread out on parchment paper and bake for about 15 minutes until it rises a bit and is golden brown. Top with your choice!
