SIX ingredient GRAIN-FREE and HEALTHY Chocolate-Cookie-Crusted Peanut Butter-Pumpkin-Fudge Granola Squares! 

ATTN: PEANUT BUTTER LOVERS! I got a NO BAKE surprise for YOU! SIX ingredient GRAIN-FREE and HEALTHY Chocolate-Cookie-Crusted Peanut Butter-Pumpkin-Fudge Granola Squares! These are the bomb and can be made in no time. 😜 Rainy days call for baking (or no baking in this case), but you get the gist. These bars could be made with any other nut butter or cookie of course. I made these with Know Foods double chocolate cookies, MaraNatha peanut butter and KitchFix grain-free granola. I do suggest using the Know Foods cookies for the crust, since the consistency ground up tends to “stick” together. KitchFix is also one of my favorite grain-free granolas. It’s low and sugar and you get the biggest chunks! 😋

Recipe:

Crust-

  • Two Know Foods double chocolate cookies
  • 1/3 cup coconut oil melted

Line a square brownie pan with parchment paper. I always spray with oil to prevent possible sticking. Grind up the cookies in a mini food processor or blender. Pour into a bowl and mix with the coconut oil. Press the mixture into the pan, making sure to pack it down tightly.

Peanut-Butter-Pumpkin-Fudge:

  • 1 cup creamy Peanut Butter
  • 2 tablespoons of coconut sugar
  • 2 tablespoons of pumpkin purée
  • 1/4 cup melted warm coconut oil

Mix together the sugar and oil in a bowl, so the sugar dissolves a bit. Then mix in the peanut butter and the pumpkin with a wooden spoon until mixed well and thickens up. Spread the fudge layer over the cookie layer.

LAST, top the fudge with the granola, pressing down slightly so it sticks. Freeze the bars for about 2 hours before cutting up!
