I just love crepes. Thin delicate pancakes with endless possibilities to stuff them with…sweet, savory…both! Today I wanted some chocolate so I created this simple vegan chocolate crepe recipe and stuffed them with almond milk Greek yogurt mixed with pink pitaya powder. Topped them with chocolate, almond butter, cacao nibs and frozen blackberries. So delicious! Give it a try and let me know what you think!
Crepe Recipe: (6 8-inch crepes)
- 1/4 cup of @bobsredmill buckwheat flour
- 1/4 cup @ottos_cassava_flour
- 1 tsp tapioca starch
- 2 tbls @nunaturals cocoa powder
- 2 tsp avocado oil
- 3/4 cup almond milk
Mix together dry ingredients, then add almond milk and oil and whisk together. Cook in well oiled cast iron pan over medium-high, spreading a thin mixture and flipping after about 1 1/2 minutes.
