Experimented with all the beans this weekend and made some delicious hummus recipes including this curry hummus. I covered some chickpea pasta in this goodness and paired it with some black bean meatballs! Will add the meatball recipe soon!
- 1 can garbanzo beans (salt free)
- 2-3 cloves of garlic
- 2 tablespoons of curry powder (may want to use less if you are using spicy)
- 1/4 cup of fresh cilantro
- 1 tablespoon lemon juice
- 4 tablespoons tahini
- 3 tablespoons olive oil
- 3-4 tablespoons of water
- Salt/pepper to taste
- (Optional if using a mild curry powder) 1 teaspoon cumin
Place all ingredients in a food processor and process until smooth! If it needs more water add it in and process more.
