Vegan Paleo Waffles!

Waffles are so much fun to make and I got a new mini Belgian waffle iron so I had to try it out. I’ve been wanting to make a vegan and Paleo recipe for a while and this one came out perfect!

Waffle Ingredients: (made about 7 of these mini waffles)

  • 1 Cup almond flour
  • 1/4 cup arrowroot
  • 1/4 cup mashed plantain
  • 1 scoop plant protein (I used @mrm_usa)
  • 1 flax egg (one tablespoon flax and 3 tablespoons water–let thicken for 5 mins)
  • 1/2 cup almond milk
  • 1 teaspoon lemon juice
  • pinch of sea salt
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon baking soda.

***If you want sweeter add vanilla and maple syrup and sub banana for plantain

Mix together dry ingredients then add wet—-batter will be thick. Heat waffle maker and cook according to instructions.

    What would you suggest as an alternative to the protein powder? I try to use only Whole Foods. I’m not sure if it’s role in the recipe is to add bulk or just up the protein. Thanks!


    1. I think another 1/4 cup of arrowroot would work!
