Vegan Paleo Waffles!

Waffles are so much fun to make and I got a new mini Belgian waffle iron so I had to try it out. I’ve been wanting to make a vegan and Paleo recipe for a while and this one came out perfect!

Waffle Ingredients: (made about 7 of these mini waffles)

  • 1 Cup almond flour
  • 1/4 cup arrowroot
  • 1/4 cup mashed plantain
  • 1 scoop plant protein (I used @mrm_usa)
  • 1 flax egg (one tablespoon flax and 3 tablespoons water–let thicken for 5 mins)
  • 1/2 cup almond milk
  • 1 teaspoon lemon juice
  • pinch of sea salt
  • 1/2 teaspoon cream of tartar
  • 1/4 teaspoon baking soda.

***If you want sweeter add vanilla and maple syrup and sub banana for plantain

Mix together dry ingredients then add wet—-batter will be thick. Heat waffle maker and cook according to instructions.

    Could you give more details on the type of plantain, green or ripe? Cooked or not? and if yes, how?

    1. Hi! I’m so sorry for the delay! I missed this message. I use a yellow plantain and needs to be a little soft. Not too brown but some spots
