Kale Parsley Pesto

Happy Monday loves! I hope you all had a wonderful weekend!! Been a busy morning, and this meal took like 15 minutes, so That’s a win in my book! Came home and BAKED this cauliflower gnocchi from TJs and thawed out some langostinos…the rest came together in no time! And I have leftovers!

Pesto:

  • 1/2 cup lacinato kale
  • 1/2 cup parsley
  • 1/4 cup olive oil
  • 1 tablespoon cashew butter
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 2 garlic cloves

Process in @mealthy hand blender and blend until smooth.
